Sushi Fuji

After discovering this wonderful restaurant, I soon became an addicted repeat offender! My recent visit was my 8th time and I still want more! Sushi Fuji Otsu is run by a staff of knowledgeable family members overseen by the strict but fair perfectionist General! All dishes are delicious, traditional kaiseki but with elements of gentle scientific experimentation to improve the appearances and tastes. The young general is a glorious chef who is always challenging and improving on his skills and dishes. I am always thankful to the Sake Maestro, Toshinori-san, who explains every dish and type of drink with such passion and insight and even more importantly in great English! He made my friend visiting from New Zealand feel so welcome and happy and they took special care of us by arranging an exclusive lunch feast! So I recommend gourmets of all nationalities to come to this fine establishment at once and get hooked on Sushi Fuji Otsu, just like my wife and I! Now, it must surely be time again to book a table for dinner if they can fit us in! Thanks for everything, Sushi Fuji Otsu!

久しぶりに大ヒットなお寿司屋さん。連れて行っていただいたのですがとっても素敵なお店でした 季節ごとにメニューが変わるようなので定期的に伺いたい 前菜の黒マグロから計算し尽くされた絶品のお料理の数々ばかりでしたが、やはり一番感動したのはウニしゃぶ。ミョウバン不使用の超濃厚ウニ出汁に貝や魚を潜らせて食べるのが幸せでした 〆の雑炊では本当に昇天しました その後に出てきた鰻の焼きしゃぶ、鴨の陶板焼きも美味しすぎて…。 若大将オススメの日本酒も教えていただき、色々飲めて幸せでした 次は夏に伺いたいです

202405 お寿司屋さんというよりは高級創作料理のお店って感じですね。 食べたことのないような料理が並びます。 お酒も料理に合わせたこだわりのものばかり。 そしてお店の皆さんも感じ良い。 とても良いお店です。

5,6月の特別コースを頂きました。 結論から言うとどの料理も本当に美味しくて大満足で、完璧です！ 人生で1,2を争うレベルのお店でした！ 料理の説明もして頂いて、その通りに食べると美味しいです！ 載せた写真のうち鰻は7割焼いて持ってきて、自分で最後仕上げに焼くのですが、ちょっと焼きすぎてしまったのは自分のミスなので言っておきます。 お店の方の心配りやサービスにも感動しました！ 四季折々の料理を食べにまた行きたいと思いました！

娘に連れて行ってもらい初デビュー。入店すると大きな凱風快晴　赤富士がお出迎え。 鰻の白焼きとタレ焼きをいただきました。秘伝セラミック入りのオガライトで焼く鰻が抜群に美味い 三河一色産の身厚い鰻をまずは百戦錬磨の科学者が焼き上げてくれます。 好みに応じて表1分裏1分を繰り返すと　極上の焼き具合で　必携ストップウォッチ㊙ 最高な焼き具合でとても美味しくいただきました。 予約オンリーの名店 是非訪れて欲しい(笑)

初めて行かせていただきました。 最近は少なくなった昔ながらのお寿司屋さんでありながら、 若い職人の新しい技を取り入れて、 お料理もおいしかったですし、 お酒のバリエーションも素晴らしかったです。 また、近々お伺いしたいと思います(^^)

Originally, this restaurant was well-known in Shiga Prefecture. The owner's son, who had been a bio researcher has returned and is aiming to create a restaurant that incorporates his expertise as a highly skilled bio-researcher. Cooking and experimentation have a lot in common, especially with regard to things like temperature control. Anyway, the recipes and creatively prepared dishes are incredible. I had an amazing meal there again yesterday. They also welcome tourists from abroad and it would be better to make a reservation two days before.
